Stockfish at the way of Colonnata - Italian recipe

Directions:  Ingredients for 4 servings: 1 kg stoccafisso already softened (fish hardened and preserved in salt) Lardo di Colonnata, onion, parsley, celery, carrot, peperoncino (spicy red pepper, Italian variety) mature tomatoes, salt, dry white wine. Mince finely the Lardo with the odors (onion, parsley, celery, carrot); brown slowly at a low flame for a few minutes. Add the stoccafisso (with the spine already removed), inserting it in the pan in such a way as to ensure that all the fish succeeds in absorbing the sauce. Add the glass of dry white wine and burn it down; at this point you should add the diced tomatoes, salt and then continue the cooking for about 1 hour. This traditional plate is often accompanied by Polenta. Try it with a white wine of good structure and acidity, such as the Leone dŽAlmerita or a fruity yellow Ribolla such as Ronco di Zegla or Komic.
