AU GRATIN CARROTS
Preparation Time: 25mins. Number of Servings: 8-10

Ingredients:
|
2 pounds carrots, sliced
|
1/2 cup chopped onion
|
1/4 cup butter or marg. divided
|
3 tbsp. flour
|
1/2 tsp. salt
|
1/8 tsp. pepper
|
1 1/2 cups milk
|
4oz. process cheese (such as velveeta) cubed
|
2 tbsp. chopped parsley
|
2 cups cornflakes, crushed
|
|
Directions: Cook the carrots till crisp-tender; drain and set aside. In a saucepan over med. heat,
saute onion in 3 tbsp. of butter till tender. Stir in flour, salt and pepper. Gradually
add milk; bring to a boil, stirring constantly. Cook for 1 min. or till thickened. Stir in the
cheese just till melted. Add carrots and parsley. Pour into a greased 8 in. square
baking dish. Melt remaining butter; add cornflakes. Sprinkle over carrots. Bake
uncovered at 350deg. for 20-25 mins. or till bubbly.
