Elliott's Easy Squash Cassarole

Ingredients:

1/2 stick butter
|
1 1/2 lbs yellow squash
|
4 grated carrots
|
1 onion chopped fine
|
1 can cream of chicken soup
|
1 cup sour cream
|
1 pkg of Pepperidge Farm seasoned bread crumbs
|
1/2 c shredded cheddar
|
|
Directions: Preheat oven to 350 degrees. Steam squash, drain, then mash. Lightly fold all ingredients together except 1/2 c bread crumbs and 1/2 stick butter. Lightly grease casserole dish and place all ingredients in the dish. In a separate sautee pan, melt reserved butter. Stir in remaining breadcrumbs. Cover casserole. Top with grated cheese. Bake for 30 min.
