Sauteed Bean and Pepper Soup.(Hearty pinto beans with red peppers, green peppers, and yellow peppers and onion too. Meat is optional. (Makes 1 1/2 servings.) )

Ingredients:

1 Can of Pinto beans
|
1 Can of Chicken broth
|
1 Green pepper; Chopped
|
1 Yellow pepper; Chopped
|
1 Red pepper; Chopped
|
1 Onion; Chopped
|
1 Stick of butter (NOT margarine)
|
Chicken strips (optional)
|

Directions: Saute up the onions and peppers in a buttered pan. Then start up the bean soup. Pour the drained beans into a pot with the chicken broth. Stir occasionally. Make sure to keep an eye on your sauteed vegetables! You don't want them to burn. Wait till the vegetables are golden browned and stir then and wait for the other side to brown.add in the thawed chicken strips to the vegetables. When the chicken is no longer a pink inside you have finished cooking*. Drain some of the broth but leave enough for a soupy texture. add the sauteed veggies and chicken into a bowl with the beans and broth. Now you're done!
*Remember to turn off all stove burners!
