Ingredients:

12 large prawns
|
4 tablespoons of diced Chinese celery
|
1 tablespoon sliced shallots
|
some red chili
|
2 teaspoons curry powder
|
2 tablespoons rice wine
|
pepper and salt
|
3 teaspoons light soy sauce
|
2 teaspoons sugar
|
dash of sesame oil
|
6 tablespoons water
|
1 tablespoon corn starch
|
cooking oil
|
|
Directions: Trim prawns, rinse well and pat dry. Marinate prawns with rice wine and pinch of pepper then coated thinly with cornstarch. Deep fry briefly in plenty of oil until prawns change color. Saute shallot and curry powder in a pan then add prawns, sprinkle rice wine and stir in all other seasoning. Cover lid and stew for 2 minutes until sauce almost dried up and thicken. Stir in red chili and diced celery, mix well and dish up.
