Tomato & Basil Scallops(Tomato & basil sauce with scallops over pasta)
Preparation Time: 15 minutes Number of Servings: 4 -6

Ingredients:

1 1/2 pound bay scallops
|
1 small can petite diced tomatoes
|
2 tablespoons chopped garlic or to taste
|
1 cup fresh basil (chopped)
|
salt and pepper to taste
|
1 pound linguine, angel hair or your favorite
|
2 -3 tablespoons extra virgin olive oil
|
freshly shredded Romano or parmesan
|
|
Directions: Drain scallops, reserve liquid.
Heat skillet, add olive oil and saute. Add scallops and saute for only a couple minutes, add diced tomatoes, basil and reserver liquid. Salt and pepper to taste. Simmer for a few minutes. When done, pour over pasta, sprinkle cheese over just before serving
