Potato Soup with a taste of Pesto(Creamy with small chunks of veg )

Preparation Time: 30 minutes

Ingredients:

3 Large baking Potatoes, peeled and cubed
1/4 cup Celery, fine diced
1/2 cup Water Chestnuts, diced
1/2 Large Sweet Onion, diced
1 Large can ( 46 oz) Chicken broth
1 tsp. Salt
2 tsp. ( rounded) Pesto sauce
3/4 cup 1/2 and 1/2 cream
1 tsp dried minced Onion

Directions:  Peel and cube the potatoes 3/4 X 3/4 inch peel and dice the Onion, dice the celery and the Water Chestnuts Place the Potatoes, Onion, Celery and the Water Chestnuts in a large pot and then add about 3/4 of the broth.Bring to a boil, reduce the heat to a simmer and cook just until the Potatoes are just tender, not mushy. Using and immersion blender ( or a standard type) puree the mixture until just creamy and thick. Add the cream, and then the Pesto, Salt and the remaining broth, stir and simmer for 5 minutes
