Sausage Tortellini Soup
Number of Servings: 6-8
|
|
Ingredients:
|
1 lb. mild Italian sausage
|
1 cup chopped onion
|
2 cloves garlic, minced
|
5 cups beef broth
|
1 cup water
|
2 cups chopped tomatoes (28 oz. can)
|
1 cup sliced carrots
|
3 teaspoons parsley
|
1/2 teaspoon basil
|
1/2 teaspoon oregano
|
1 8 oz. can tomato sauce
|
2 cups tortellini
|
1 1/2 cups sliced zucchini
|
|
Directions: Remove skins from sausage and cook until brown. Remove sausage from pan leaving drippings. Saute onion and garic until soft. Add all ingredients except reserved sausage, zucchini, and tortellini. Simmer for 30 minutes. Add sausage, zucchini and tortellini and simmer another 30 minutes.
