Coconut-Battered Shrimp(A delicious fried shrimp recipe)

Ingredients:

| 1 bag frozen large shrimp
|
| 125ml (1/2 cup) all-purpose flour
|
| 125ml (1/2 cup) grated coconut
|
| 2 tbsp. baking powder
|
| Very cold water
|
| Oil for frying
|

Directions: 1. In a bowl, combine the flour, baking powder and coconut with enough cold water to make a medium-thick batter (the consistency should be like crepe batter)
2. Dip each thawed shrimp into the batter and immediately lower into the hot frying oil; the batter should puff up; remove as soon as batter is lightly browned
3. Place on paper towel and repeat until finished
Try a dipping sauce made from light fish stock flavored with a little brown sugar and a few drops of chili sauce.
