Sweet Corn Muffins(A sweeter version of traditional corn muffins.)

Ingredients:

1 1/2 cups all purpose flour
|
1 cup sugar
|
3/4 cup cornmeal
|
1 Tablespoon baking powder
|
1/2 teaspoon salt
|
2 eggs
|
1/2 cup shortenng
|
1 cup milk, divided
|
|
Directions: Prheat oven to 350 degrees.
In a bowl, combine dry ingredients, add eggs, shortening and 1/2 of the milk, beat for 1 minute, add rest of milk, eat just til blended. Fill paper lined muffin cups 3/4 full. Bake at 350 degrees for 25 -30 mintes or til muffis test done.
