Ingredients:
| 6 bacon strips
| 1 pound fresh mushrooms, sliced
| 1 large onion, chopped
| 2 celery ribs, chopped
| 2-3 garlic cloves, minced
| 1/2 cup butter or marg.
| 1 tsp. rubbed sage
| 1/2 tsp. salt
| 1/4 tsp. pepper
| 28 cups day-old bread cubes (about 3 pounds sliced bread)
| 1 pound bulk sausage, cooked and drained
| 2 1/4 to 2 1/2 cups chicken broth
Directions: In a large skillet, cook bacon till crisp. Remove to paper towels to drain. Reserve 2 tbsp. drippings. Saute mushrooms, onion, celery and garlic in drippings and butter till tender. Stir in sage, salt & pepper.
In large bowls, combine mushroom mixture, bread cubes, sausage, broth and bacon; toss to coat. Transfer to 2 greased 13X9 inch baking dishes.Cover and bake at 350deg. for 45mins. Uncover; bake 10-15 mins. longer or till lightly browned. OR: stuff turkey, then bake leftover in pan as directed above. OPTIONAL: you can also add 1 medium chopped apple. I find this gives a nice flavor and extra moistness.
