Seafood Newburg

Ingredients:

1-16oz. package frozen cod, flounder, or haddock filets
1 pound medium shrimp or 1-12oz.frozen shelled and deveined shrimp, thawed and drained.
1/2 cup butter/margarine
1 pound mushrooms, sliced
1/3 cup flour
1tsp. salt
1/8 tsp. pepper
4 cups half and half
1 cup milk
1-10 oz. frozen peas
1-6 oz. frozen alaska king or snow crabmeat, thawed
1/4 cup cooking or dry sherry
3/4 cup shredded pasteurized process cheese
2-4 oz. jars pimentos, drained and cut into thin strips
paprika

Directions:  Let frozen fish thaw about 15 minutes, cut into bite size chunks, in a 4 quart sauce pan over med-high heat add 3 tablespoons butter, cook mushrooms until tender, remove mushrooms to bowl, in same pan melt 4 more tablespoons butter, stir in flour, salt and pepper, until blended, cook 1 minute, gradually stir in half and half and milk until mixture is smooth, add fish chunks, shrimp, peas, crabmeat with its liquid, sherry and mushrooms, cook stirring frequently, until fish flakes when tested with fork and shrimp are tender and mixture is slightly thickened. Stir in pimento and cheese, cook until cheese is melted, sprinkle with paprika, serve with hot biscuits.
