Inside-Out Chicken and Stuffing(Chicken and stuffing deconstructed)

1 apple, diced
2 stalks celery, diced
2 tablespoons olive oil
1 teaspoon caraway seed
6 cups crusty white bread, cubed
1 cup chicken broth
4 pound chicken, cut into 10 pieces
salt and pepper to taste
1/4 cup chopped fresh parsley

Directions:  1. Preheat oven to 450 degrees. 2. On rimmed baking sheet, toss apples, celery, 1 tablespoon oil, and caraway seeds. Add bread. Arrange in even layer and bake 10 minutes. 3. Pour broth on top of stuffing mixture and stir until absorbed. 4. Rub chicken with 1 tablespoon oil, and salt and pepper. Add to baking sheet. 5. Bake until done, 25-30 minutes. Sprinkle with parsley and serve.
