Sweet Potatoes with Marshmallows

Preparation Time: 20 minutes prep time, 1 1/2 hours baking time

6 large sweet potatoes
1/2 cup skim milk
1/2 cup freshly squeezed orange juice
4 T. unsalted butter, melted
1/4 c light brown sugar
1 t ground cinnamon
1/2 t ground nutmeg
1/4 t ground cloves
1 1/2 t salt
freshly ground black pepper (to taste)
jumbo marshmallows

Directions:  Wash potatoes carefully, prick several times with a knife and fork, and bake in 375 degree oven until very soft. Once the potatoes are cool, scoop out the insides. Put the sweet potatoes into your mixer bowl, add the skim milk, orange juice, butter, brown sugar, cinnamon, nutmeg, ground cloves, salt, and pepper. Mix together just until combined for chunky potatoes, or mix longer for a smoother consistency. Transfer to a baking dish and top with jumbo marshmallows. Bake for 20-25 minutes, until it is warm but before the marshmallows burn. You might need to cover the top with aluminum foil to protect the marshmallows.
