salmon on tomato and onion relish(a perfect summer dish, salmon on a bed of fresh tangy tomato and spring onion relish with smashed potatoes at only £1.50 per serving)

Ingredients:

1 grated cucumber
150g cherry tomatoes, halved
7 spring onions, finely chopped
small bunch or coriander
mint
1 whole lemon, juiced
3tbsp olive oil
salt and ground pepper to taste
4 x 150g salmon fillets
4 x large potatoes cut in to pieces
4 cloves of garlic
soy sauce

Directions:  To make the relish mix the grated cucumber, tomatoes and spring onions and toss to combine. In a seperate bowl and the juice of one lemon, olive oil, herbs and add salt n pepper to taste, add the juice to the tomato, onions and cucumber and leave to refridgerate for a hour to combine the flavours. peal the potatoes and cut into even peices and add to a pan boiled salt water on a low heat and cook untill softened. pre-heat oven to 180 degrees, place the individual salmon fillets on to tin foil (enough to rap the fillets) add one garlic clove salt pepper and a splash of soy sauce to the salmon fillet in the foil and bake for 30 mins. mash the potatoes and place on plate add the relish in a mound and place the hot fillets on top
